Turkey Burgers with Cheddar and Spinach-هاك شوف 2015-

I really love turkey burgers.  I love the fact that they are supposed to be healthier for you than regular burgers and I love that they are made from turkey.  I love turkey.  It's flavourful and it's lean and it makes great burgers  Turkey is also supposed to be a super food.  So all round, it's a favourite with me.

This version is packed with some lovely flavours.   Onion, Garlic . . .  spinach (there's that health thing again.)

A good balsamic vinegar . . .  for a bit of sweetness.  Soy sauce . . .  for a bit of saltiness.  Some lemon juice for freshness.   A bit of chili powder for a little spark.  Some bread crumbs for binding . . . and a good white cheddar cheese.  There is nothing nicer than English Cheddar.   They invented it you know.  The thing with a good cheddar is  . . .  a tiny bit goes a very long way.

A good burger is made even better with the toppings you choose to put with it.  A a slice of cheddar  to melt over top and a toasted  buttery brioche bun.   Lettuce and mayonnaise.   Sliced red onions.  That's the perfect burger in my books.   I am in heaven.

*Turkey Burgers with Cheddar and Spinach*
Serves 4

Deliciously moist turkey burgers stuffed full of lovely flavours.   

4 ounces of wilted spinach, squeezed dry
1 small onion, peeled and cut into chunks
1 fat clove of garlic, peeled and chopped
2 spring onions, trimmed and coarsely chopped
2 TBS good balsamic vinegar
2 tsp soy sauce
1 tsp fresh lemon juice
1/2 tsp of mild chili powder
35g of strong cheddar cheese, grated (1/4 cup)
30g of fresh soft white bread crumbs (1/2 cup)
1 pound of lean ground turkey
4 slices of medium cheddar cheese
Toasted buns, lettuce, sliced red onions, mayonnaise to finish

Put the spinach, onion, garlic, spring onions, balsamic vinegar, soy sauce, lemon juice and chili powder into the bowl of a small food processor.  Blitz together until coarsely chopped  You don't want it really fine, but you also don't want big chunks of anything. Put the turkey into a bowl.  Scrape the contents of the food processor onto the turkey along with the cheese and bread crumbs.  Mix all together well, using a light hand.  Gently shape into four flat patties and place them onto a plate.   Chill in the refrigerator for about an hour.

When you are ready to cook them either heat a grill or a grill pan, or a skillet over medium high heat.  Lightly coat it with non stick cooking spray.   Add the chilled turkey patties and cook them for 5 to 6 minutes per side, until nicely browned,  cooked through and the juices run clear.  Top each patty with a slice of cheddar cheese and set aside to melt the cheese while you toast the buns.

Serve the burgers on toaste buns.   I like mine with lettuce, mayonnaise and thinly sliced red onions.  Delicious!
